I've been trying to be good recently about keeping my sweet tooth in check but sometimes it gets the better of me. Fortunately I have a few healthy (and quick!) dessert recipes stored up and when in dire need (like yesterday at lunch), I can make this delicious and moist chocolate cake.
Its title actually refers to the Great Depression when people wanted cake but couldn't afford butter and eggs however I prefer to think of it as a cake that you can indulge in when you're feeling lousy and not wake up to an extra 5 pounds the next day (it's only about 250 calories per piece).
1.5 c flour
1 Tbsp cocoa
1 tsp baking soda
1 c sugar
5 Tbsp canola oil
1 Tbsp vinegar
1 tsp vanilla
1 c cold water
Pour into greased pan and bake for 30 minutes at 350 degrees.
Remove cake from pan immediately.
Dust on powdered sugar to serve.
