Creative Lunching

One of the things I like best about working from home is the opportunity to make my own lunch.  Since my favorite meals usually involve little bites of many different things, I love when our fridge is emptying out at the end of the week and all we have left are little bits of left overs and nearly empty containers.  I pride myself on my ability to turn an empty fridge into a plate of exciting amuse-bouches.

Friday's lunch included left over corn and black bean salad, plain yogurt with honey, almonds and blueberries, a handful of salad with the last cranberries, and the end of a block of cheese and remaining crackers.

Oh, and the best ginger ale ever - recently discovered.
